Seared Scallop Piccata
Ingredients
  • 12 large sea scallops, just over 1 lb. (U10s are the really nice big ones)
  • 1 Tbsp. kosher salt
  • 1 tsp. freshly ground black pepper
  • 1 Tbsp. vegetable or other neutral oil
  • 2 Tbsp. unsalted butter
  • ¼ cup good dry white wine
  • ¼ cup freshly squeezed lemon juice
  • 2 Tbsp. water
  • 1 Tbsp. shallot, very small dice
  • 2 Tbsp. chopped preserved lemon rind
  • 1 Tbsp. capers, rinsed thoroughly
  • 2 tsp. chopped fresh oregano
  • 1 Tbsp. chopped fresh flat-leaf parsley
