  • 1 (2-inch) piece fresh ginger, peeled
  • 1 tablespoon granulated sugar
  • ⅓ cup gochugaru (Korean red pepper)
  • ⅓ cup fish sauce
  • 3 scallions, trimmed
  • 1 medium carrot or ½ medium daikon, peeled
  • 1 tablespoon pine nuts (optional)
