Aquafaba ranch dressing and cold chickpea macaroni salad
Healthy, filling and cheap variation of a classic
Ingredients
  • subheading: Dressing:
  • 4 tbps Aquafaba
  • ½ cup yogourt
  • White vinegar
  • Onion powder
  • Garlic powder
  • Hot Sauce
  • Olive oil
  •  
  • subheading: Salad:
  • Macaroni
  • celery with leaves
  • carrots
  • onions
  • some fresh parsley
  • some fresh dill
Steps
  1. Make macaroni, put them in the fridge.
  2. Use an immersion blender to mix together four tablespoons of aquafaba, the yogourt, a little bit of white vinegar, the onion powder, garlic powder and hot sauce.
  3. Once your base is ready to go, slowly drizzle in our oil. If you drizzle it too quickly, the emulsification could break.
  4. Add a little salt and pepper.
  5. Put the dressing into the refrigerator. Let it cool down a bit to let it set up.
  6. While everything is cooling down, cut all the vegetables. Reserve in a bowl.
  7. Fold the chickpeas with the cold macaroni and ranch dressing until everything is nice and coated.
  8. In a separate bowl, add a little bit of oil, vinegar, salt and pepper to your vegetables.
  9. Place macaroni salad first in plate, add vegetables in the middle, finish with some celeri leaves.
