One Pot Pumpkin Chili {Vegan Oil & Gluten-Free}
Ingredients
  • 1 cup diced red onion
  • 2 cloves garlic, minced
  • 2 stalks celery, diced
  • 2 carrots, chopped
  • 1 tablespoon of water or vegetable broth, to sauté
  • 1 (15.5 oz.) cans white beans, drained
  • 1 (15.5 oz.) cans red beans, drained
  • 1 (15.5 oz.) cans black beans, drained
  • 1 (15 oz) can  pumpkin puree
  • 2 cups diced tomatoes
  • 1 cup diced bell peppers
  • 2 bay leaves
  • 4 cups vegetable broth
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 teaspoon fresh sage
  • 1 teaspoon fresh thyme
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 2 tablespoons chia seeds*
