  • 2.5 lbs chicken breast (s) (thawed, drained, boneless, skinless; or tenderloins)
  • 60 oz great northern beans (rinsed & drained; 4-15 ounce cans) or (6 cups soaked and cooked dried beans, drained.)
  • 2 cups chicken broth (or bone stock)
  • 20 oz Rotel tomatoes & chilies (mild, medium or hot; 2-10 oz can)
  • 14.5 oz diced tomatoes (1- 14.5 oz can)
  • 1.5 cups Seasoning Blend: onion, celery, green pepper (frozen, diced)
  • 2 cups corn (frozen, or 1-14.5 oz can corn, drained)
  • 1 tsp mineral salt
  • 2 tsp cumin (ground)
  • 2 tsp chili powder
  • 1 tsp onion powder
  • ½ tsp garlic powder
  • ½ cup 0% Greek yogurt (optional)
