Ingredients
  • Basic Cabbage Sauté (cabbage, onion, carrot), sprinkled with salt and crushed a bit.
  • Sliced mushrooms
  • Sliced hot peppers
  • Coco oil
  • Leftover Meat, cut up (I used chunks of Alton Browns Meatloaf)
  • Fresh herbs if desired
  • Sauce: (chili or hot sauce, unsweetened PB, SMALL AMOUNT OF RICE VINEGAR, honey, all adjusted to taste
  • Sesame oil
  • Al dente cooked whole wheat noodles (broken spaghetti or egg noodles), tossed in a tiny bit of sesame oil
Steps
  1. Sauté mushrooms a few minutes in coco oils. Add cabbage mix. Cook, stirring often until softened. Cover and cook a few minutes. Add hot peppers, garlic. Cook a few minutes. Veggies should still be slightly crunchy. Add chopped cilantro if you have it/want it. Toss with a bit of rice vinegar or lime. Turn off heat.
  2. Put hot noodles in bowl, top with vegetables. Drizzle with sauce. Top with meat of choice. Sprinkle with hemp seeds or chopped cashews/peanuts. Serve with lime slices.
