Tofu Benedict with Cauliflower Hollandaise
Ingredients
  • subheading: For the cauliflower hollandaise:
  • ½ head cauliflower approximately 2 heaping cups, broken into florets
  • 2 teaspoons extra virgin olive oil divided
  • ¾ cup yellow onion diced
  • 1 clove garlic minced
  • 1 cup non-dairy milk
  • 2 Tablespoons nutritional yeast flakes
  • 2 Tablespoons lemon juice
  • 1 cup Great Northern beans
  • 2 teaspoons white miso paste
  • ¼ teaspoon chili powder
  • ⅛ teaspoon turmeric
  • Salt and freshly ground pepper to taste
  • subheading: For the baked tofu:
  • 1 teaspoon extra virgin olive oil
  • 1 Tablespoon reduced-sodium tamari
  • 10 ounces extra-firm tofu in vacuum packaging sliced into 4 slices (1 14 oz. package of extra firm water-packed tofu will also work, but it should be pressed first.)
  • ¼ cup freshly squeezed lemon juice
  • subheading: For the Benedict:
  • 2 English muffins broken into halves
  • 1 tomato sliced
  • Parsley chopped (garnish)
