Slow Cooker Cauliflower Mole
Ingredients
  • 1 head cauliflower
  • 4 dried ancho chiles
  • 3 cups water
  • ¼ cup raw almonds (or cashews)
  • 2 tbs cocoa powder
  • 1.5 tsp dried oregano
  • 1 tsp chili powder
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp cinnamon
  • 1 tsp sugar
  • ½ tsp liquid smoke (optional)
  • ⅛ tsp ground clove
  • Salt to taste
Steps
  1. Toast the chiles in a dry pan just until they begin to smoke
  2. Place chiles in water and bring to boil
  3. Turn off heat and allow to soak approx 30 minutes
  4. This process can be sped up by cooking the chilies in water in the microwave, 4 minutes
  5. Remove stems from chiles and place chiles and soaking water in blender with the rest of the ingredients, except the cauliflower
  6. Blend well, taste and add salt if needed
  7. Chop cauliflower into small pieces and place in slow cooker
  8. Add sauce and cook until soft. (approx  4 to 5 hours on high)
