ROASTED CHICKPEAS
Delicious roasted chickpeas are an excellent source of protein, and an easy to make snack option.

Ingredients
  • 2, 15-ounce cans chickpeas, drained, rinsed, dried, and set aside
  • 1 tablespoon olive oil
  • salt and pepper, to taste
  • 1 teaspoon dried Italian seasoning
Steps
  1. Preheat oven to 400 degrees.
  2. Toss chickpeas, olive oil, salt and pepper, and dried Italian seasoning together in a medium bowl.
  3. Arrange in a single layer on a baking sheet
  4. Roast in a preheated oven, shaking every 10 minutes, for 15 to 30 minutes until chickpeas are golden and desired crispiness is achieved.
  5. Taste and adjust seasoning as needed.
