Chestnut Cake (Castagnaccio)
Ingredients
  • 60g pine nuts, soaked for 4 hours
  • 130g walnuts, soaked for 4 hours
  • 130g raisins, soaked in 770ml of water for at least an hour (set aside the water for cake mixture)
  • 500g chestnut flour
  • 2 to 3 tbsp of maple or date syrup
  • A pinch of sea salt
  • Fresh rosemary, to taste
  • 4 tbsp of extra virgin olive oil
