Episode 20 - Quesadillas
Ingredients

  • 1 cup - chickpea flour
  • 2 Tablespoons - nutritional yeast
  • 2 T - ground flax or chia seed
  • 1 teaspoon - baking soda
  • 2 t - curry powder or whatever spices you like
  • 1 t - garlic powder
  • ½ t - crushed red pepper (optional)
  • 1.5 cups - water
  • subheading: Black Bean & Corn Filling:
  • 1 sweet potato, cooked and mashed
  • 1 can of pinto beans, drained and rinsed and mashed
  • 1 can of black beans, drained and rinsed, left whole
  • ½ cup of corn, thawed from frozen, or canned
  • 3 to 5 cloves garlic, minced
  • ½ t dried oregano
  • 1 to 2 t chili powder (optional)
  • 3 to 4 stems of kale, chopped
