Ingredients
- 16 oz cream cheese
- 8 to 10 oz mozzarella cheese (shredded)
- ¾ portion of frozen chopped spinach, the kind that comes in the square box type thing (I believe one package is 1 pound? Honestly didn't check)
- Coconut flour
- Grated parmesan cheese
- 1 to 2 bags plain (or any flavor) pork rinds
- 3 eggs
Steps
- Mix the mozz cheese, softened cream cheese, and spinach together until well combined.
- Roll into balls (I used a tablespoon measurement)
- Freeze for an hour or so
- Pulverize pork rinds and mix with a decent amount of parmesan cheese. I don't know exactly but I usually use an almost 1:1 ratio, perhaps a little less of the parm but you can do this to your liking.
- Dip balls into flour, then eggs, then into pork rind mixture, back into eggs, and finally into pork rinds again.
- Fry as soon as possible, although you want the cream cheese to be a little softened so it's not still frozen in the middle. It should be by the time you're done breading them all.
- I fried for roughly 2 minutes, but that could vary depending on oil temp.
- (You can also freeze into a sheet and make sticks, I might try this next time!)
- You can also cut this recipe down by a lot, it made about 40 balls with some filling left over to stuff into a chicken breast or two at a later time
