Bibi's Chicken Parmesan with Spinach

Ingredients
  • ½ pound chicken breast
  • 1 pkg frozen spinach
  • 1 cup mayonnaise
  • 1 cup Parmesan cheese
  • ¾ cup sour cream
  • 1 teaspoon ground pepper
Steps
  1. Poach chicken until slightly done.  Cool and cut into bite size pieces.
  2. Microwave frozen spinach till thawed, drain.
  3. Mix Parmesan/mayo/sour cream together.
  4. Mix chicken and spinach together.  Place in 9x12 baking dish.
  5. Spread Parmesan mixture on top.
  6. Bake uncovered at 350 degrees for 35 minutes or till edges are browned.
