Cheddar Potato Soup
Ingredients
  • 3 stalks celery, chopped
  • 3 to 5 carrots, chopped
  • 1 small onion, chopped
  • 1 can of chicken broth
  • 1 cup milk
  • 1 cup sour cream
  • 2 cups cheddar cheese
  • 4 to 5 potatoes cubed
Steps
  1. Sauté the celery, carrots, and onion in butter.
  2. Add potatoes to crock pot and add chicken broth.
  3. Add more water if needed to cover potatoes.
  4. Add veggies and cook in crockpot for 6 to 8 hours on low.
  5. Before eating add cheese and sour cream.
  6. Add milk if needed.
  7. Add shredded chicken if you want.
Notes
  • Could double recipe for large crockpot
  • Can use immersion blender to smooth out.
