Chicken Rice and Mushroom Casserole
Ingredients
  • Rice
  • 2 cups Uncle Bens Converted Rice
  • 2 sticks butter, melted
  • 1 large can of mushrooms or 4 small
  • 2 cans French onion soup
  • 2 cans chicken broth or Better Than Bouillon
  • 3 tsp soy sauce
  •  
  • Chicken
  • 1 rotissorie chicken shredded
  • 8 oz sour cream
  • 2 cans cream of chicken soup
  •  
  • 1 cup mozzarella cheese
Steps
  1. Mix all rice ingredients and microwave in white casserole dish covered for 20 minutes. Let stand for 20 minutes.
  2. While microwaving, mix shredded chicken with sour cream and chicken soup. Once rice is thickened, pour chicken mix on top. Top with mozzarella cheese. Bake at 350 degrees for 35 minutes.
