Rustic Turkey & Veggie Soup (CONVERTED TO INSTANT POT)
Instant Pot:  Saute Turkey, then add onions & garlic. Add remaining ingredients (through red wine, EXCEPT SPINACH).  Manuel High for 5 minutes.  NR for 5 minutes.  Open and add spinach and stir.  Close and seal lid for about a minute or two.
Ingredients
  • 1 lb 93% lean ground turkey
  • ¼ tsp sea salt
  • 2 tsp oregano
  • 1 tsp basil
  • Black pepper, to taste
  • 3 cloves garlic, minced
  • ½ yellow onion, chopped
  • 1 yellow bell pepper, chopped
  • 1 zucchini, diced
  • 2 (14.5oz) cans diced tomatoes
  • 1 (8 oz) can tomato sauce
  • subheading: 2 cups low sodium chicken broth:
  • ⅛ tsp red pepper flakes (optional)
  • ⅓ cup fresh cilantro, chopped
  • 1 cup spinach
  • ¼ cup red wine (optional, but amazing!)
  • Fresh cilantro, for garnish
  • Grated Parmesan cheese, for garnish
