Spicy Tempeh and Broccoli Rabe with Rotelle
Ingredients
  • 1⁄2 lb whole wheat spiral pasta or ½ lb other spiral-shaped pasta

  • 1 (15 ounce) package tempeh, cubed
  • 1⁄2 cup vegetable broth, plus 2 tablespoons vegetable broth
  • 2 tablespoons soy sauce
  • 2 tablespoons tomato paste
  • 1 garlic clove, pressed
  • 1 tablespoon fennel seed
  • 1 teaspoon red pepper flakes (to taste)
  • 1 1⁄2 teaspoons dried oregano
  • 1⁄2 teaspoon red wine vinegar
  • subheading: BROCCOLI RABE:
  • 1⁄4 cup olive oil
  • 5 garlic cloves, sliced thinly
  • 1 bunch broccoli rabe, tough stems trimmed, chopped coarsely (½ to ¾ pound)
  • 2 to 3 tablespoons water or 2 to 3 tablespoons vegetable broth
  • 2 teaspoons red wine vinegar or 2 teaspoons balsamic vinegar
  • salt & freshly ground black pepper
