  • 2 Tablespoons unsweetened non-dairy milk (I use soy)
  • 90 g (⅓ cup 2 Tablespoons) caster or granulated sugar
  • 90 g (½ cup) light or dark brown soft sugar
  • 2 teaspoons baking powder
  • 1 teaspoon bicarbonate of soda (baking soda)
  • 5 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 350 g (2 ¾ cups 1 Tablespoon) plain (all-purpose) flour
