Creamy Leftover Turkey Soup {Easy Turkey Corn Chowder Recipe}
Ingredients
  • 2 Tbsp unsalted butter
  • ½ tsp olive oil
  • 1 small onion, diced (yellow, brown, or white)
  • 1 to 2 garlic cloves, minced
  • 3 Tbsp all-purpose flour
  • 4 cups chicken broth, (1 liter)
  • 1 lb. potatoes, peeled and cut into ½-inch cubes (480g)
  • 2 to 3 cups cubed or shredded cooked turkey, (250 to 375g)
  • 2 cups frozen corn, (or drained canned corn) (350g)
  • 1 cup heavy cream, (or half and half) (240ml)
  • ½ tsp dried thyme
  • ½ tsp salt
  • Freshly ground black pepper
  • Thinly sliced fresh chives, for garnish
