Tzatziki Sauce - Vegan

Ingredients
  • 1 cup cashews - raw & soaked
  • ¼ to ½ cup water
  • 1 tblsp dill - dried
  • ½ lemon (2 tblsp lemon juice)
  • Lemon zest
  • 4 garlic clove
  • ½ cucumber - grated & drained
  • ¼ onion - thinly sliced
  • Salt & Pepper to desired taste
Steps
  1. Soak cashews for 2 to 4 hours
  2. Grate cucumber, add to sieve & sprinkle with pinch salt & allow to drain, save cucumber water
  3. Thinly slice onion
  4. Add drained cashews to blender (nutribullet)  & add ¼ cup water + cucumber water & blend
  5. Put creamy mix into bowl & add crushed garlic cloves + lemon zest + drained cucumber + lemon juice + sliced onion + salt & pepper & mix
  6. Place in refrigerator to cool
