Soutzoukakia (Baked Spiced Meatballs in Tomato Sauce)
Ingredients

  • 2 onions, grated
  • 1⁄4 cup extra-virgin olive oil
  • 6 garlic cloves, minced
  • 2 1⁄4 teaspoons table salt, divided
  • 2 tablespoons all-purpose flour
  • 1⁄2 cup water
  • 1 (15-ounce) can tomato sauce
  • 2 bay leaves
  • 3⁄4 teaspoon ground cinnamon, divided
  • 1 cup panko bread crumbs
  • 1⁄2 cup whole milk
  • 1⁄2 cup chopped fresh parsley
  • 2 large eggs
  • 1 1⁄2 tablespoons ground cumin
  • 1 teaspoon pepper
  • 1 1⁄2 pounds 85 percent lean ground beef

  • Use the large holes of a box grater or the shredding disk of a food processor to grate the onions. The meatballs and sauce both use parts of the same onion mixture. Serve the meatballs with mashed potatoes or rice.
