Pickled Veggies
Ingredients
  • 3 tablespoons brown rice vinegar
  • 1 teaspoon maple syrup
  • ½ teaspoon hot sauce
  • ½ teaspoon salt
  • ⅛ teaspoon black pepper (about 5 turns)
  • 2 cups thinly­sliced Napa cabbage (130g)
  • ½ cup grated or thinly­sliced carrot ribbons (use your vegetable peeler or mandolin for this / 40g)
  • ½ cup grated or thinly­sliced daikon radish ribbons (use your vegetable peeler or mandolin for
  • this / 50g)
  • 3 green onions, sliced (green and white parts / discard the root end)
  • 1 garlic clove, minced
Steps
  1. In a large mixing bowl, whisk together the brown rice vinegar, maple syrup, hot sauce, salt
  2. and pepper.
  3. Add the Napa cabbage, carrots, daikon radish, green onions and garlic. Stir well so everything
  4. is evenly coated
  5. Store in an airtight container in your fridge
