Honey roasted chicken, homemade basil pesto and salad with homemade mayonnaise dressing
Ingredients
  • 1 chicken (whole)
  • Akacie honey
  • Light syrup
  • 2 bundles of basil
  • 80 g pinenuts
  • Grated parmesan
  • 1 egg yolk
  • ketchup
  • chili
  • paprika
  • Olive oil
  • rapeseed oil
  • Lemon juice
  • 1 iceberg salad head
  • tomatoes
  • sweet peppers
  • 1 chili (medium heat)
  • 1 tsp dijon mustard
Steps
  1. Preheat the oven at 200°C
  2. Rinse the chicken in cold water and cut off the legs (including thighs), wings and breasts.
  3. Mix honey/syrup, paprika and ketchup to a BBQ mix and smear it on the chicken parts. Cook in the oven for app. 40 min.

  5. Take the basil and blend it in a food processor or blender. Add oil little by little, as well as the pinenuts, grated parmesan cheese and lemon juice. The consistency should be thick but pourable.
  6. Chop salad, peppers, tomatoes and chili
  7. subheading: Mayonnaise dressing:
  8. Whip the egg yolk with mustard and a bit of lemon juice while SLOWLY pouring in rapeseen oil while it thickens. The more oil the thicker it gets. Maybe you want to lighten it with some low fat sour cream
  9. mix in chopped chili, paprika and ketchup
