Simple Egg Roll in a Bowl
Ingredients
  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1-inch piece ginger, minced
  • ¼ to ½ cup Vidalia onion, thinly sliced
  • 3 large carrots, shredded
  • 4  cups shredded cabbage
  • 1 cup frozen baby peas
  • 3 tablespoons low sodium tamari
  • 1 teaspoon toasted sesame oil
  • Salt & pepper to taste

  • Toppings: sriracha, green onion, cilantro, sesame seeds
Steps
  1. Heat 1 tbsp of olive oil over medium heat.
  2. Add red onion and sauté for 2 minutes to soften.
  3. Add carrots, ginger, and garlic and sauté for another 2 minutes.
  4. Add cabbage, mushrooms, frozen edamame, tamari and a splash of water.
  5. Sauté for 5 to 10 minutes until veggies are at your desired tenderness.
  6. Add toasted sesame oil and salt and pepper to taste.
  7. Top with all the goods!
