Creamy Beet Hummus and Sweet Potato Chips

  • 2 cups freshly cooked chickpeas (or reheat in aquafaba cooking liquid until soft), drain but RESERVE aquafaba (cooking liquid)

  • ¼ to ⅓ cup chopped cooked & peeled beet

  • Aquafaba as needed

  • ¼ cup tahini
  •  
  • garlic to taste
  • juice of 1 lemon (or to taste)

  • 1 tsp paprika OR use smoked paprika
  •  
  • salt to taste

  • sweet potatoes
  • seasonings
  • balsamic glaze or vinegar
