Beets and Horseradish
Ingredients
  • 2lbs. fresh beets, roasted and ground in processor. Could use canned beets which don’t need cooking.
  • 1 horseradish root or jar of prepared horseradish usually found in refrigerated section near pickles.
  • Used 1+Tbs of jarred horseradish to start.
  • 4 tablespoons white vinegar
  • 1 tsp Salt
  • 1 tsp Sugar
Steps
  1. Cook beets with skins on. After cooled, skin will pretty much slide off.
  2. Canned beets don't need cooking.
  3. Grate beets on fine grater or use food processor.
  4. Peel horseradish and grate.
  5. Mix all ingredients. Let sit for few hours

  • Amount used for 11 people.
