Khao Phra Ram Long Song “Swimming Rama” (ข้าวพระรามลงสรง)
Ingredients
  • 1 pound boneless, skinless chicken breasts or pork loin
  • 2 teaspoons salt
  • 2 teaspoons baking soda (optional)
  • About 2 cups prepared Thai satay sauce (see link to recipe in the post), warmed
  • 1 pound Chinese water morning glory (aka Chinese spinach) or 12 ounces broccoli florets
  • 4 cups cooked long-grain white rice, kept warm
  • ¼ cup Nam Prik Pao, store-bought or homemade (see post for explanation)
  • 2 fresh red or green Thai long chilies or jalapenos, thinly sliced crosswise (optional)
