Crockpot Apricot Chicken

Ingredients
  • 7 chicken drumsticks or thighs
  • 1 small yellow onion, sliced
  • 2 tsp extra virgin olive oil
  • ½ cup apricot preserves or honey
  • ¼ cup ketchup
  • 2 Tbsp Worcestershire sauce or soy sauce
  • 2 cloves garlic, minced
  • 2 tsp minced fresh ginger (¼ tsp ground ginger)
  • 2 cups cooked rice
Steps
  1. Preheat a large skillet over medium high heat.
  2. Season chicken with salt and pepper if desired.
  3. Add oil to skillet and place chicken skin side down, the oil may splatter so be careful not to get burned.
  4. Sear the chicken on both sides until golden brown but not cooked through, about 2 mins per side. Turn heat off and set aside.
  5. Add onion to the crockpot, place chicken on top and pour any pan juices over everything.
  6. In a medium sized bowl, combine apricot preserves, ketchup, Worcestershire Sauce, garlic and ginger. Pour over chicken.
  7. Cover and cook on low for 6 hours. Serve with rice or potatoes with your favorite veggies. The sauce (after cooking) is perfect for drizzling!
Notes
  • To make a freezer meal put everything together in a Ziploc bag and press the air out and lay flat in freezer, will last 3 to 4 months
