  • ⅔ cup (151g) milk, whole preferred, at room temperature
  • 1 ½ teaspoons King Arthur Pure Vanilla Extract
  • ¼ teaspoon lemon emulsion*
  • scant ⅔ cup (92g) blueberries
  • Soak
  • ¼ cup (57g) water, warm (99°F to 110°F)
  • 2 tablespoons (28g) lemon juice
  • 2 tablespoons (14g) confectioners' sugar, sifted if lumpy
  • Blueberry filling
  • 1 ⅓ cups (186g to 226g) blueberries
  • zest of 1 lemon
  • 1 tablespoon lemon juice
  • 1 tablespoon granulated sugar
  • Frosting
  • 16 tablespoons (227g) unsalted butter, softened
  • ¼ teaspoon King Arthur Pure Vanilla Extract
  • ¼ teaspoon lemon emulsion, optional
  • ⅛ teaspoon salt
  • 2 ½ cups (283g) confectioners' sugar, sifted
  • zest of 1 lemon
  • 1 tablespoon lemon juice
