Buckwheat-Cardamom Chocolate Chunk Cookies
Ingredients
  • 16 tablespoons (227g) unsalted butter, room temperature
  • 1 cup (213g) dark brown sugar, packed
  • 2 teaspoons vanilla extract
  • ½ cup (99g) granulated sugar
  • 2 large eggs
  • 2 ¼ cups (270g) Birkett Mills Buckwheat Flour*
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon ground cardamom, to taste*
  • ⅔ cup (113g) semisweet chocolate, wafers or chopped from a bar
  • ⅔ cup (113) bittersweet chocolate, wafers or chopped from a bar
  • coarse salt, to sprinkle on top
  • note: Birkett Mills Buckwheat yields best results here; it's milled from whole buckwheat and sifted for a lighter texture and milder flavor.
