Ingredients
  • 1 ½ lbs. Pre Chuck Roast or steak
  • 1 ½ cups onion sliced (I like chopped)
  • subheading: Dry Rub (divided):
  • 3 tbsp brown sugar can also use honey or agave
  • 2 tsp cocoa powder
  • 1 tsp chili powder
  • 1 tsp salt
  • ½ tsp cumin
  • ½ tsp ground oregano
  • ½ tsp cinnamon
  • subheading: Base for the mole:
  • ¼ cup tahini (I used Doña Maria Mole instead)
  • 2 tbsp tomato paste
  • 2 cloves garlic
  • 1 chili pepper in adobo sauce (I used ⅓ of a chili)
  • 4 oz. brewed coffee (can use decaf)
  • ¾ cup broth
  • 2 tbsp reserved dry rub
  • subheading: Peanut Salsa:
  • ½ cup dry roasted peanuts toasted
  • 3 stalks green onion
  • ½ cup cilantro
  • 1 tsp lime juice
  • salt
