This is definitely an all-American soup, and definitely very good.

Ingredients
  • ½ pound ground beef or turkey
  • ¾ cup chopped onion
  • ¾ cup shredded carrots
  • ¾ cup chopped celery (OPT.) the original recipe didn't call for it.
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 4 tablespoons butter, divided
  • 3 cups chicken broth
  • 4 cups cubed potatoes (1 ¾ pounds approx.)
  • ¼ cup all-purpose flour
  • 2 cups (8 ozs.) processed cheese velveeta, (cubed)
  • 1 ½ cups milk
  • ¾ tsp. salt
  • ¼ to ½ tsp. pepper
  • ¼ cup sour cream
Steps
  1. 1. Brown beef & drain.
  2. 2. Sauté carrots, basil & parsley in butter.
  3. 3. Add broth, potatoes & beef.
  4. 4. Bring to a boil.
  5. 5. Reduce heat, cover & simmer 10 to 12 minutes.
  6. 6. Make a whites sauce with 4T. butter, flour, milk, salt & pepper.
  7. 7. Combine all and stir in cheese.
  8. 8. Remove from heat and stir in sour cream.
