Stuffed Chicken Bacon Fillets **** TO BE FORMATTED FROM FACEBOOK****

Finely chopped zucchini, red capsicum, red onion, and bacon. all doused in balsamic vinegar. Olives I had as a side as I forgot to add them, but normally I'd add kalamata olives to the stuffing. Just pound your chicken breast flat as you can get it without tearing, (I do it in a sandwich bag) lay on the veggie/bacon stuffing over the chicken and roll it into the middle of bacon strips. Use the bacon strips to literally tie it together and I cooked it an hour or so on 180ish degrees after basting the outer bacon with a butter salt and balsamic vinegar xx served it on broccolini and roasted mixed veg that was in the stuffing that I had left over lol xx It was to die for sigh lol.
