Ingredients
- 250ml / 1 cup water
- 2 tbsp Irish Whiskey (Optional)
- 900 gms / 6 cups mixed dried fruits ( see my comments above)
- 225 gms/ 1 cup soft brown sugar ( use granulated if that's all you have)
- 230 gms / 2¼ cups plain (all purpose) flour
- 170 gms/ 1½ sticks butter
- 1 tsp Bicarbonate of Soda ( Baking Soda)
- 1 heaped tsp mixed spice ( pumpkin spice will do nicely)
- 2 large beaten eggs
- a handful of chopped nuts to top (Optional)
- Apricot glaze (Optional)
