Claudia Fleming's Stout Gingerbread
Ingredients
  • 1 cup (250ml) stout, such as Guinness
  • 1 cup (250ml) light molasses
  • ½ tablespoon baking soda
  • 2 cups (280g) all-purpose flour
  • 2 tablespoons ground ginger
  • 1 ½ teaspoons baking powder, preferably aluminum free
  • ¾ teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ¼ teaspoon freshly ground nutmeg
  • ⅛ teaspoon freshly ground cardamom
  • 3 large eggs, at room temperature
  • ½ cup (100g) granulated sugar
  • ½ cup (90g) packed dark brown sugar
  • ¾ cup (180ml) neutral-flavored vegetable or grapeseed oil
  • 1 tablespoon grated fresh ginger (peeled)
