Oil-Free White Bean Chili [Vegan, Gluten-Free]
Ingredients
  • subheading: For the Chili:
  • 1 large yellow or orange bell pepper, chopped
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 4 15.5-ounce cans white beans (cannellini, navy, chickpea...), rinsed and drained (or about 7 ½ to 8 cups, cooked and drained)
  • 4-ounce can of green chilis
  • 1 tablespoon chili powder
  • 2 ½ teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • ¼ to ½ teaspoon salt (start low and taste, adjust if needed)
  • ¼ teaspoon pepper or to taste
  • ¼ teaspoon cayenne (optional)
  • Fresh cilantro, to serve

  • ½ cup soaked cashews, soaked 2 to 4 hours
  • 1 tablespoon lemon juice
