Ingredients
- 2 Tbsp. butter, salted or unsalted
- 1 small onion, chopped
- 2 medium leeks, sliced
- 5 garlic cloves, minced
- 8 button mushrooms, thinly sliced
- 2 carrots, sliced
- 4 cups vegetable broth (Better Than Bullion)
- 2 cups water, warm
- 1 potato, peeled and diced
- 2 cups cauliflower florets
- 1 bay leaf, dried
- 2 tsp oregano, dried
- ⅓ cup rolled oats
- 2 cups kale, chopped
- salt and pepper to taste
Steps
- Melt butter using the sauté function.
- Add onions and leeks and cook until edges are lightly browned.
- Add carrots and cook, stirring frequently, about 3 minutes.
- Add mushrooms and garlic, stirring frequently, for about 3 minutes.
- Throw in potatoes, cauliflower, broth, and water.
- If needed, perform a quick deglaze of the pot insert.
- Bring up to a boil.
- Add bay leaf and oregano and mix.
- Turn off the IP by selecting Cancel.
- Carefully place lid on, seal and select Pressure Cook for about 10 minutes.
- At the end of 10 minutes, perform a QR.
- Stir in the oats and kale.
- Turn the sauté function back on and continue to cook for 15 minutes.
- Add salt and pepper to taste.
- Serve with some fresh lemon juice and fresh Dökkt Rúgbrauð (Icelandic Rye Bread).
