Instant Pot Beef Stew

Ingredients
  • 2 Tbsp. oil
  • 1 ½ lbs of stew meat
  • ¼ cup of flour
  • salt and pepper to taste
  • 3 cups beef broth
  • packet of beef stew seasoning (or see note below)
  • medium onion, diced
  • 3 to 4 medium potatoes, diced
  • 2 large carrots, diced
  • 2 to 3 stalks celery, diced
  • ½ cup frozen peas
  • 2 tablespoons cornstarch
  • ¼ cup of warm water
Steps
  1. Turn pot on saute, when it reads Hot add oil.
  2. Put stew meat in a ziploc bag with flour and salt and pepper and shake until well coated. Discard excess flour.
  3. When pot says Hot again, add meat and saute until browned. Remove from the pot and add a cup of beef broth, scrape the bottom well. Do not leave any stuck-on bits.
  4. Add remaining 2 cups of beef broth and the packet of beef stew seasoning (or the seasonings below in the notes), mix well.
  5. Add the beef back to the pot, along with the onion, and cook on manual 14 minutes.
  6. Quick release the pressure and add potatoes, carrots, and celery. Cook on manual 6 more minutes.
  7. NPR 10 minutes and then release any remaining pressure.
  8. Add frozen peas. Make a slurry with the cornstarch and warm water and add to the pot. Stir well. Put the lid back on for 5 minutes.
  9. If after the 5 minutes the gravy is not as thick as you'd like it, put the pot back on Saute and stir often until the stew thickens more.
  10. Enjoy!
Notes
  • If you want to use your own seasonings instead of the beef stew seasoning packet, use the following:
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp basil
  • ½ tsp oregano
  • ¼ tsp cayenne pepper
