Peas Pulao (Indian Basmati Rice and Peas)
Ingredients
  • 2 tablespoons ghee or vegetable oil
  • 4 to 5 whole cloves
  • 1-inch stick cinnamon
  • 4 to 5 small green chiles, slit lengthwise
  • 2 medium onions sliced thin (about 2 cups)
  • 2 cups basmati rice, washed well in several changes of cold water, then drained thoroughly
  • 1 cup fresh or frozen  green peas
  • 1 ½ teaspoons cumin powder
  • 4 cups water
  • Kosher salt
