Classic Gluten Free Whoopie Pies
Ingredients
  • ¾ cup plus 2 tablespoons (123 g) all purpose gluten free flour (I use Better Batter)
  • scant ½ teaspoon xanthan gum (omit if your blend already contains it)
  • ⅓ cup (27 g) natural unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ¼ teaspoon kosher salt
  • ½ cup (109 g) packed light brown sugar
  • 2 tablespoons (28 g) unsalted butter, melted and cooled
  • 2 tablespoons (24 g) non-hydrogenated vegetable shortening (I like Spectrum brand)
  • 1 egg (50 g, weighed out of shell) at room temperature, beaten
  • ¾ teaspoon pure vanilla extract
  • ½ cup plus 2 tablespoons (5 fluid ounces) milk (low-fat is fine, nonfat is not; nondairy is fine)
