Good Gravy Bowl From “Isa Does It,”
Ingredients
  • 2 teaspoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, chopped
  • Pinch of salt
  • 1 ½ tablespoon cornstarch
  • 1 ½ cups vegetable broth
  • 1 tablespoon dried thyme
  • ½ teaspoon dried sage
  • Sprinkle of black pepper
  • 1 ½ cup cooked brown lentils
  • 2 tablespoons white or brown miso
  • Vegetable, grain, and protein of choice (great over broccoli, potatoes, baked tofu or tempeh, etc.)
Steps
  1. Saute onion and garlic in oil with a pinch of salt for 5 to 7 minutes.
  2. Add thyme, sage, and pepper and sauté for 30 seconds or so.
  3. Add lentils, miso, and 1 cup of broth. Puree in blender until smooth.
  4. Return to pan and heat gently. Mix cornstarch with ½ cup broth.
  5. Pour into the warm gravy, stirring constantly, to thicken. Serve over veggies, grain, and protein of choice.
