Olive Brussels Sprouts with Feta, Roasted Red Peppers and Bacon
Ingredients
  • 2 lbs fresh Brussels sprouts, halved
  • olive oil spray
  • kosher salt and pepper
  • 2 tbsp finely chopped kalamata olives, (in a jar -- reserve the brine)
  • ¼ cup finely chopped roasted red peppers
  • ¼ cup crumbled feta cheese
  • 2 slices bacon, cooked and crumbled
  • 2 tbsp reserved kalamata olive brine, (see above)
  • 1 tbsp extra virgin olive oil
