(Recipe Challenge): Mountain Man Casserole

Ingredients
  • 2 pounds pork sausage
  • 2 pounds frozen hash brown potatoes
  • 8 eggs, beaten
  • 2 cups cheese, grated or shredded
  • 3 Tb olive or vegetable oil
  • Salt and Pepper (to taste)
Steps
  1. Preheat your 8 qt Instant Pot using the Saute function until the display reads HOT.
  2. Add oil.
  3. Crumble sausage and saute until browned and fully cooked.
  4. Remove cooked sausage and drain on paper towels.
  5. Using the sausage drippings in the insert, Saute the hash brown potatoes
  6. Remove hash brown potatoes and put them on a plate
  7. Place trivet in the IP and add 1 cup of water.
  8. Add hash browns to 7' Pyrex or Ramekin-style cooking pot.
  9. Then add sausage to the top of the hash browns.
  10. Then add the beaten eggs to the sausage and spread them evenly in bottom of the Ramekin.
  11. Salt and pepper to taste.
  12. Close and seal the IP.
  13. Cook at high pressure for 8 minutes.
  14. Perform Quick Release and sprinkle top with cheese.
  15. Place lid back on for 2 minutes to melt the cheese.
