All purpose cheese
Ingredients
  • All Purpose Cheese
  •  
  • We love it best in grilled cheese sandwiches, enchiladas, quesadilla or on pizza!  Good for anywhere you want melted cheese.
  •  
  • ½ c cashews*
  • ½ c white beans*
  • 4c hot water
  • ¼ c Miso
  • ½ c  Tapioca flour
  •  
  • Blend until very smooth
  • Pour into a pot and cook constantly stirring until it is the consistency of thick melted cheese.  Be patient this will take awhile… you need to reduce the liquid by 75%
  • Use or refrigerate, it does great on the reheat.

  • note: you can sub white beans for the cashews
  • note: you can sub cashews for the white beans

  • note: *against all my own advice about do not sub the tapioca flour I found myself desperate with company coming so I used chickpea flour and to my amazement it worked great!
