Halloween Brownie Cookies!
Halloween is right around the corner! If you're looking for a yummy, healthy-ish holiday treat, try these Halloween Brownie Cookies. Made with just six ingredients, they're soft, chocolatey cookies that taste like brownies. Use your favorite Halloween themed cookie cutters and have fun!
Ingredients
  • • 1 ¾ cups blanched almond flour
  • • ¼ cup unsweetened cocoa powder
  • • 1 Tbsp tapioca flour
  • • 1 tsp baking powder
  • • ¼ cup pure maple syrup
  • • 1 tsp pure vanilla extract
Steps
  1. Step 1 - Gather the ingredients.
  2. Step 2 - Add the ingredients for the dough to a mixing bowl.  The icing will get mixed in another bowl.

  4. So simple - in a medium-sized mixing bowl, add all the ingredients and mix well.
  5. Step 3 - Mix until well combined and dough forms a ball.
  6. Step 4 - Roll the dough between two pieces of parchment paper (no need to refrigerate).
  7. The number of cookies will depend on the size of your cookie cutters.
  8. Use any size cookie cutter to cut out cookie shapes and place on a prepared baking pan with parchment paper.
  9. Use the leftover dough to make more cookies.  Simply gather into a ball and roll out the dough again.  Continue this process until all the dough is used.
  10. You may end up with a small bit of leftover.  I usually throw that onto the cookie sheet as my “tester”.  Keep an eye on that cookie, since it is smaller, it will bake faster.  Do not burn the tester cookie.
  11. Step 5 - Bake at 350 degrees F. for 5 to 10 minutes depending on cookie size.
  12. Step 6 - Let cool on a rack.
  13. Step 7 - Make the icing and decorate cookies as desired.
