Chocolate Chip Cookies, THM

Ingredients
  • 1 stick butter, softened
  • Pinch of pink salt (more if using unsalted butter)
  • ½ cup xylitol
  • ⅓ cup Just Like Brown Sugar (see how to make your own in steps)
  • ½ Tbsp pure vanilla extract
  • 1 large egg
  • 1 packed cup almond flour
  • 2 scoops vanilla whey isolate (I used Jay Robb)
  • 1 cup Lily's chocolate chips
  • or chop 1 Chocolat Stella Swiss Dark Chocolate 3.5 oz bar with Stevia extract and no added sugar
Steps
  1. Mix all ingredients together and use a tablespoon measuring spoon to scoop the dough on to a parchment lined pan. Flatten them out with your hand and then bake them at 350 degrees for 10 minutes.
  2. You can make brown sugar using ⅓ cup xylitol or erythritol, ¼ tsp. blackstrap molasses, and 2 drops of rum extract or maple extract.
