Instant Pot Blackberry Pancake Bundt
A quick and easy fresh blackberry pancake cook bundt cake style

Ingredients
  • 2 cups fresh or frozen blackberries
  • 2 cups buttermilk pancake mix
  • 1½ cups water
  • ½ cup white sugar
  • 2 drops blackberry extract (optional)
  • 2 additional cups of water for instant pot
  • Grease for bundt pans
  • Aluminum foil and paper towel for bundt pans
Steps
  1. In the instant pot liner pour at least a cup of water. Place in trivet.
  2. Grease bundt pans.
  3. In bundt pans place 1 cup blackberries.
  4. Add water, pancake mix, extract, and sugar until smooth.
  5. Pour mixture into bundt pans.
  6. Cover each bundt pan with a paper towel then foil.
  7. Place pans inside pot. On an instant Pot Lux place on cake option 25 minutes. On the duo, 25 minutes high pressure.
  8. Quick release steam and allow to cool before removing to plate.
  9. Serve with a dallop of whipped cream.
Notes
  • This recipe will make two  7 inch bundt pan cakes.
