Avocado Stuffed Meatballs (or Hamburgers)

Ingredients
- Coconut oil (for greasing the pan)
- 1 pound ground grass-fed beef
- 1 egg
- 3 Tbsp chopped fresh parsley
- 4 cloves garlic, minced
- 1 Tbsp dijon or stone ground mustard
- 1 tsp sea salt
- 1 tsp pepper
- 1 tsp onion powder (optional)
- ½ Avocado, cut into small cubes (approx. ¼" to ½" square depending on the size of your meatballs).
Steps
- Preheat the oven to 400 degrees F. Lightly grease a sheet pan or glass baking dish with the coconut oil.
- In a large bowl, combine all the remaining ingredients except the avocado. Mix well and, using wet hands, form 8 to 12 meatballs.
- To stuff the meatballs, make a hole in the center, insert an avocado cube, and close up the hole, making sure the avocado is fully surrounded by meat.
- Place the meatballs on the prepared sheet pan or baking dish and bake until cooked through, about 12 minutes.
Notes
- You can also make 4 hamburgers instead of meatballs. Either stuff with avocado or slice and arrange on top just before serving. Allow a few minutes more bake time due to size.
- Meatballs are shown on a bed of faux broccoli rice.
