Avocado Stuffed Meatballs (or Hamburgers)

Ingredients
  • Coconut oil (for greasing the pan)
  • 1 pound ground grass-fed beef
  • 1 egg
  • 3 Tbsp chopped fresh parsley
  • 4 cloves garlic, minced
  • 1 Tbsp dijon or stone ground mustard
  • 1 tsp sea salt
  • 1 tsp pepper
  • 1 tsp onion powder (optional)
  • ½ Avocado, cut into small cubes (approx. ¼" to ½" square depending on the size of your meatballs).
Steps
  1. Preheat the oven to 400 degrees F.  Lightly grease a sheet pan or glass baking dish with the coconut oil.
  2. In a large bowl, combine all the remaining ingredients except the avocado.  Mix well and, using wet hands, form 8 to 12 meatballs.
  3. To stuff the meatballs, make a hole in the center, insert an avocado cube, and close up the hole, making sure the avocado is fully surrounded by meat.
  4. Place the meatballs on the prepared sheet pan or baking dish and bake until cooked through, about 12 minutes.
Notes
  • You can also make 4 hamburgers instead of meatballs.  Either stuff with avocado or slice and arrange on top just before serving.  Allow a few minutes more bake time due to size.
  • Meatballs are shown on a bed of faux broccoli rice.
