Black-Eyed Pea Jambalaya
Ingredients
  • 6 slices bacon
  • 1 cup chopped onion
  • ½ cup chopped green bell pepper
  • ¼ cup chopped celery
  • 1 teaspoon minced garlic
  • 1- ½ cups diced, smoked ham
  • ½-pound andouille or other smoked sausage, sliced
  • 3 cups chicken stock/broth (Kitchen Basics recommended)
  • 2 (15 ounce) cans black-eyed peas, undrained or equivalents cooked (see notes)
  • 2 cups uncooked, long grain rice
  • ¼ cup sliced pickled jalapeno, chopped, optional
  • ¼ cup sliced green onion
  • 1- ½ teaspoons kosher salt, or to taste
  • ½ teaspoon freshly cracked black pepper, or to taste
  • ¼ to ½ teaspoon of Cajun seasoning ( Slap Ya Mama recommended) or to taste, optional
  • 1 medium bay leaf
  • Chow Chow for garnish, optional
  • Hot sauce, for the table
