Ingredients
  • 12 C heavy cream
  • 4 C sugar
  • 1 vanilla bean scraped
  • 6 C milk
  • 1 tsp vanilla extract
  • 30 egg yolks
Steps
  1. heat cream sugar and vanilla bean in heavy bottom sauce pan to a simmer
  2. combine 4 cups of this in bain marie, set in ice bath
  3. temper hot cream into yolks, then strain through chinois into the cold mix.
  4. chill completely then spin
